i'd probably say "black" sable although not nearly as black as many.

actually east german dogs can be laid back if there is not too much czech in
them. czech lines descend from east german and alot of east have alot of czech
now unless the breeder is one of few who concentrates on east and even those
are using czech dogs as there are not that many east available.
east have a reputation for being slow to mature and laid back.
