Generally the ones you buy in the store are not the ones you would choose to grow at home. In fact many varieties of veggies are not even available to the home gardener. The varieties chosen to grow for the supermarkets are chosen depending on what ships and packs best, fastest growing, resistant to bugs, virus, etc. Spinach is no exception there are many different varieties, curly, flat, etc. If the stuff you see in the store is different its because its a different variety.
