I remember my dad describing something similar from when he grew up during the depression in a little town near Capital Reef National Park. In a remote farming community with twelve children, his parents utilized everything when they slaughtered a cow, sheep or pig. He did teach us how to make butter and ice cream, but I'm so glad he never asked us to try Blood Pudding, Head Cheese, or other similar "delicacies" - I don't think I could have handled it, LOL! The one time my mom made Chicken and Dumplings when I was six, I thought she said Chicken and Ducklings! I ran to my room in tears and refused to eat. Years later my mom mentioned she'd never tried that recipe again because I was so upset - she still had no idea why!
