Hi Donna,
I have a small electric stove I use in the summer when it is hot, I got that
when I went to work but had a "summer kitchen with wood stove outside" before
that.
It is by choice, I have been cooking on a wood stove for about 5 years and
definitely prefer it. I tend to burn things on the electric, I don't have to
watch as closely with the wood stove because you can move the pot where ever
you need it. It took getting used to, we had some horrible meals at first, had
some bread that looked really good until you cut into it and had a raw center.
LOL
I love it, if I ever have to leave it goes with me. Yes it is more work but
maybe I was born in the wrong century but it makes me feel content.
It also heats our house so it does double duty. Thanks goodness in this day of
expensive fuel.
We have 10 cord of wood put away which should last us close to 2 years.
Margaret

  Hi, Margaret,
I am curious about your wood stove. Some questions are:
Is it your only cooking stove?
Is it a choice or necessity?
  Do you love it?
Thanks for your time, and for the recipe!

    Hi
This is my favorite Potato Soup, although it is creamy and thick, maybe not
what you were looking for.
This was a cheap filling meal when the kids were little and still one of my
favorites for supper.
    6 Tablespoons butter
3 c onions or leeks minced
    3 Tablespoons flour
    4-5 c water
    4 c potatoes cubed
    salt and pepper
    1 1/2 c milk
1/2 c heavy cream or use 1/2 and 1/2 for it all ( I cut the milk part down
a bit )

In a soup kettle, melt 3 T of the butter over moderate heat. Stir in the
onions or leeks, cover pot and cook slowly for 5 min. stirring to prevent
scorching.
Whisk in the flour and stir over moderate heat for 2 min to cook the flour
without browning.
Remove the kettle from the heat and cool a moment. Then gradually beat in 1
cup of hot water with the whisk, blending thoroughly. Stir in the remainder of
the water. Stir in the potatoes, salt and pepper to taste. Bring to a boil,
then simmer partially covered, for 40 min until the potatoes are tender.
Remove the soup from the heat. Strain the potatoes, returning the liquid to
the soup kettle. Mash the potatoes and add them to the kettle. ( I just mashed
the potatoes in the pot as I like to keep some chunks in it ) With a wooden
spoon stir in the milk, cream and remaining butter. Taste for correct seasoning.

I cook on a wood stove so this is an easy soup to make.
We put chunks of cheese in the bowl, pour the soup over it and put chunks
of cooked bacon on top.
Great meal with a muffin or bread.
When the kids were little we had a milk cow so had our own homemade cheese
and the bacon came from our own pigs so it ended up being the cheapest meal
possible.

    Margaret
