I was reading one of those mysteries with recipes recently and jotted this
down.
1 10 ounce package chopped spinach, thawed, drained
1 cup fresh basil, finely chopped
2 tablespoons olive oil
1/2 cup onions, finely chopped
2 cloves garlic, very finely minced
1 cup mayonnaise (low fat or fat-free is fine)
1/2 cup sour cream (low fat or fat-free is fine)
1/2 cup Parmesan cheese
9 burrito-size flour tortillas
Combine spinach and basil. Put into a sieve and gently press out the water.
Sauté onions and garlic in olive oil (don't burn the garlic). Drain and
combine
with spinach and basil. Mix in mayonnaise, sour cream and Parmesan.
Spread over tortillas. Roll up tightly, jelly-roll fashion. Wrap in
plastic wrap
and chill 4-6 hours. Cut into 1/2-inch-thick slices. Makes about 6 dozen
slices.
