Hi All,
I just got a bunch of artichokes from a neighbor who grew them.? Who grows
artichokes?? Anyway, I am looking for recipes for artichoke dips, soups,
anything you can think of.?? TIA,

Artichokes~~
1 1/2 pounds artichokes
1/2 cup boiling water
2 tbls butter or marg
1 tsp mild vinegar or white wine
1 tbls chopped parsley
2 drops hot pepper sauce
Wash and scrape artichokes, and cook in boiling water, covered, until just
tender. Do not cook beyond this point, or artichokes will become tough again
test with a toothpick after 15 min. Drain well. Melt butter, combine with
remaining ingred(s) and pour over cooked vegetable. Serves 4-6 (Instead of
seasoned butter, cream artichokes in 1 cup medium white sauce or slice
cooked artichokes and saute in butter.)
