Horses that finish in the money are all tested following the race (blood and urine) and any other horse that the stewards want to test (say a favorite betting interest doesn't run true to form). The horses don't return to their own barns, they go to a separate barn, watched the entire time by officials while their grooms bathe them and walk them until the samples are received, split and signed for. The fines, suspensions and penalties are enough to make most trainers hire night watchmen. The tests are sensitive enough that the caffeine in chocolate and coffee will give you a positive test.
