I believe that you can not do this with that scanner. In Transparency
mode it will not scan the whole platen, but only a small area. You
can't get decent scans of negatives in Reflective mode. Even on
scanners that will scan the whole platen in Transparency mode, you'd
have to take the negatives out of the plastic pages and put them
directly on the platen.
2. Making "high quality" scans (BW & colour) for the web (I know, high
quality and the web don't fit well together).
Pick a representative negative and put it in the negative holder.
Start up your scanner driver. I run my scanner drivers from within
Photoshop, but you may prefer to run them stand-alone. Just leave
everything at the default settings and make a Prescan by clicking on
the Prescan button. Usually you will want to crop by dragging the
lines that show the edges of the scan area. Then click on Scan and see
what you get. If you're lucky it will look pretty darned good without
any tweaking. If not, you'll need to learn the scanner driver's
toolkit one tool at a time. Vuescan is pretty simple and intuitive, so
I would try it first after Canon's own driver. SilverFast is for the
experienced user, so leave it until you learn your way around using one
of the simpler drivers.
2a. High quality scans for printing on a pro inkjet (huge Epson
something or other with K3 ink and roll paper).
I don't know if this scanner is up to that task. Generally speaking,
flatbed scanners do an OK job on film, but serious users will want a
film scanner for this.
2b. How can I get set up on one of these web sites many of you have
for publishing/sharing pictures?
There are whole books on this subject. Learn your way around the
scanner first and then come back to this. Most people get into trouble
in digital by trying to run before they learn to walk.
