Marc,
My cardiologist tells me that I have been adhering to the Emeril
Theory of Cardiac Diatetics (not Dianetics) Emeril says "Pork
Fat Rules" and add more salt. He even adds salt to bacon, tasso,
proscuitto, andouille and Smithfield ham.
