        My only own conclusion was that one about that the fixed focus
point for the v700 and v750 was above the glass, this is the Epson
stated fixed focus point for the others Perfection scanners with one
lens, you wrote that the high resolution bigger lens focus for the
v700 dual lens system has a different focus and it is not on the
glass, I accepted I could be wrong  on this particular point but that
it does not change the fact the lens has a fixed focus.
If you know the exact fixed focus for the scanner, you also know where
to put your image to obtain the sharpest scanning, that is on the
glass for most Epson Perfection scanners, anyway to scan with the
standard holders has some advantages that according the case and
situation could compensate a bit of sharpness loss.
BTW, I will start to think about Epson graphic arts scanners, they
have lenses that you can really focus manually via software.-
