There is a much much better way, you should go into Settings, General,
Accessibility, Voiceover, scroll over to set the home button to turn on
and off voiceover by triple clicking.

There are three choices, Do Nothing, Turn Zoom on and off, and turn
Voiceover on and off.

That way, it's very very simple and reliable to control Voiceover
whenever you like.

The problem is, once you shut voice over down, how do you get it back
again without five or ten minutes of guesswork? I tap the screen at
approximately the middle, twice, with two fingers, for ten minutes or so
before I finally get speech back. Is there a better way?

I have not yet tried out this game, but from everything I have read so
far, indications are that you should shut down Voiceover before playing
the game.
If you have the home button set to shut down Voiceover by tripple
clicking, that would be the best way.
