Any thoughts on how long the shelf life of hypo or F6 fixer would be in containers with floating lids? Just purchased two five gallon plastic
containers with lids.

   Kodak states that the life of F-6 is as follows:
Open tray: 1 week
Gallon tank: 2 months
Stoppered bottle: @65F 3 months
"         "       @75F 3 weeks
Capacity is stated to be 150 8x10 prints per gallon but this is very optimistic and will not produce archival fixing. This is somewhat greater capacity than F-5 which is given as 100 sheets of 8x10, not stated whether paper or film. The life of F-6 is somewhat longer than F-5 except in stoppered bottles at low temperature where it is the same.

Of course the life with a floating lid depends largely on how well the lid seals but they usually let some air in. The main limit of hypo life is the oxidation of the sulfite. The sulfite keeps the acid from decomposing the thiosulfate so if enough sulfite is oxidized the thiosulfate will also oxidize forming other sulfur compounds. Usually the hypo will become milky and eventually the sulfur will come out of solution and also smell.
