Unity is a shell interface over the GNOME desktop environment that is the default experience from Ubuntu 11.04. Its main components are the panel (at the top of the screen) and launcher (at the left, often incorrectly referred to as the dock). That answer was straight from the Unity FAQ. When I installed 11.04 I installed it using the accessibility if you do that it defaults to the classic ubuntu so it works perfect.
