There are a few ways for sending email to multiple recipients. As noted the 
docs go into most of it. You can add headers, such as Cc and Bcc and therefore 
send the mail to more than one recipient, and you can string more than one 
recipient in, say, the $PHORM_TO variable in the config: 

$PHORM_TO = "person1@xxxxxxxxxxxxx, person2@xxxxxxxxxxxxxxxx"; 

Or in a Cc/Bcc header, etc. But what's really slick is the option to create 
multiple recipients per different email template files. By creating more than 
one email template, you can selectively choose what data goes to which person. 
For instance, person1 might get the full data from the form. Person2 might be 
the accounting department and they get only certain financial data from the 
form. Person3 might be the boss and he or she might get just an executive 
summary from the form (such as who sent the form and why). One form response 
with selective data from it going to different people. It's a GREAT feature 
and discussed in the docs.
