I make a lot of vegetable soups. you don't even need a crockpot.
besides what Terri wrote (leaving out the salt) you can season it with
"Mrs Dash" instead of salt
if you want just 1-2 bowls a day, and you want a different type every
day, you can make a pot of soup, eat what you want, and then freeze the
rest in one-cup portions. you don't even need special freezer
containers - you can use plastic cups, and wrap each cup in a sandwich bag.
the next day, make a different flavor, and do the same with the
leftovers. soon you will have a lot of different flavors of soup in
your freezer, ready to heat and serve.
to heat, take the cup out of the freezer and let it stand on the counter
for a little while, or run water from the tap over the outside of the
cup, just to melt the outside of the frozen soup enough to release it
from the cup. you can heat it to boiling in a small pot, or you can use
a microwave and heat it right in the serving bowl.
