This thing is actually more of a baked burrito than an enchilada…and it’s pure
crap, mostly canned stuff, but oh it is good.

Well I fixed something I’ve not cooked in a number of years…
I smoke a chicken awhile back…
I discovered some decently sized whole wheat low carb tortillas (only 5 net
carbs each)…
And made my sour cream chicken enchiladas. Soooo yum!
The only thing missing, is somehow I’m out of pace picante sauce, that is the
magic touch when serving.
I did a quick side, can of corn, drained can of petite diced tomatoes, can
chopped green chiles and a bit of Vidalia onions…
I fasted all day yesterday.
This is just drool-worthy GOOD!!
