Hi Everyone
You may recall I posted this pic of smoked Carolina Reaper Chillies. I got
around to making them up into a sauce. Wow, they are so hot, yet smell and
“taste” so fruity. It’s like a Habanero amped up on both
Scoville Heat units, but also the aroma max amped up.
Simmering the pot filled my neighbourhood with smokey, Habanero fruitiness. I
was sweating from the aroma…
All the raw ingredients simmering. Just 6 Reapers to start with. This gave it a
nice kick at around Tabasco heat, which is my usual medium heat sauce. As I
bottld some, then add more Reapers to boost the heat more.
My final Reaper madness had around 20 Carolina Reapers in a ¼ of this
11L pot.
Looking nice once simmered and blended smoothly
Voila…the final product bottled and labelled. It is very spicey.
Although definitely edible. I resisted the urge to make it ridiculously hot. I
have had several customers comment that it is fantastic, and the best tasting
sauce.
