Just picture Chipotle smoke and Habanero fruitiness (thinking passionfruit
aromas) and amp to 11….the smell was seriously good, albeit dangerous as
Capsaicin is highly pungent.
And just to imagine, way back when I first started eating Chillies seriously,
just after I joined this group 200 odd years ago, I posted a Tom Kai Gai
recipe (Thai chicken coconut milk soup) and it was YOUR recommendation to put
slits in the whole birds eye chilli so one would get the flavours and some heat
without burning a new one…worked a treat.

All the raw ingredients simmering. Just 6 Reapers to start with. This gave it a
nice kick at around Tabasco heat, which is my usual medium heat sauce. As I
bottld some, then add more Reapers to boost the heat more.
My final Reaper madness had around 20 Carolina Reapers in a ¼ of this 11L pot.

Voila…the final product bottled and labelled. It is very spicey. Although
definitely edible. I resisted the urge to make it ridiculously hot. I have had
several customers comment that it is fantastic, and the best tasting sauce.
