Estela, it is so beautiful here now with all the mimosa out blooming and
driving hayfever people nuts. A different Spring to the English one with all
the daffodils.

It was a store bought (Costco) corned beef brisket flat….I’ve never corned one
on my own, but I plan to some time in the near future.
I’ve seen recipes from Alton Brown and from America’s Test Kitchen which both
look good and fairly simple to do….
I did this easy, took out of bag, placed in my enameled cast iron pot…..I
poured a dark beer over it (Local beer, Turbo Dog)….threw in some bay leaves,
some whole black pepper corns, and about 4 or so whole peeled and slightly
smashed garlic cloves.
I added a bit more water to fully cover the meat.
I Brough it up to a simmer on the stove, threw the lid on and put in a 275-#00F
oven for about 3 hours.
I checked it at 3 hours and it needed a bit more time…put back in for a 4th
hour and then pulled it.
I took out of the pot onto a tray, I poured about a cup of the broth on it and
covered with foil.
I brought the broth back up to a boil and added in my heirloom carrots, my cut
up pink turnips (potatoes would work too), and let this boil about 7 minutes.
And then added my wedges of cabbage that I left a bit of the core in so as to
hold together and let this all boil 15 more minutes…..ready to serve after that.
Yummy stuff.

In England corned beef is something what I tell Geoffrey looks like canned dog
food, maybe akin to Spam..not spam techie 🤔😜🤣 I will not eat it. G loves
corned beef hash..better Google that Kelly😜. In the UK corned beef is called
salt beef but I never see it and a corned beef and tomato’s sandwich was a fave.
I used to cook corned beef aka silverside in my pressure cooker but that was
many years ago.
Am back in Spain. Phew what a Covid travel nightmare, post to follow later.
