Hi all,
It was Peggy's birthday yesterday and she asked me to make
one of her favourite dishes,
Lobster Papaya Quesadillas with Mango Cream.
Quesadillas with a filling of diced lobster and papaya, goat
cheese, Monterey Jack cheese, diced roast mild red and green
chillies, onion, cilantro and lime. Dressed with a Mango
Creme Fraiche sauce. I served it with a side of Pico di Gallo
on lettuce. And some Champagne of course.
Those who were at the ozfood gathering in Massachusetts may
remember that I made these for the dinner at Terri's house.
