Tracked down some rare-ish lamb ribs recently and cooked up over the weekend.
Laid over Rosemary sprigs and onion slices. Add 2:1 chicken stock and Balsamic
vinegar. Couple Tbsp brown sugar. Foil and braise 1.5-2hrs at 160C.

Voila – reduced braising liquid for a lovely sauce (well skimmed of fat)
The ribs themselves were quite fatty, so left the fat behind and picked over
the tender , tasty meat.
