NYE was a total bust for us, we had our booster shots Thursday
and by NYE Peggy had extreme pain in her arm and a high fever.
So our planned NYE Mexican feast with Margaritas became a
chicken vegetable soup and an early night.
Luckily Peggy felt a lot better by dinner time yesterday so I did
our Mexican then:
Prawns with Anchovy Jalapeno Sauce
Smoked Ham & Cheese Enchiladas with Salsa Verde
Chicken Piquillo Cheese Quesadillas with Tapatio hot sauce
Guacamole, Lime Juice Cabbage, Mango Jalapeno Mint Salsa.
It was cool and rainy so we drank a bottle of Gros Manseng
instead of Margaritas.
All very enjoyable, sorry no photos.
Tonight just steaks and veggies.
Tomorrow (Monday) night I plan to round out the long weekend by
cooking John Folse's Red Bean and Rice Sausage Gumbo except
I'll use plenty of smoked ham instead of sausage. With the forecast
sunny and warm we'll have the Margaritas with that.
Hopefully that will complete our annual Christmas Ham trek!
