Decided we should have some Enchiladas for Friday dinner.
Chicken Enchiladas with Green Chile Salsa.
Turned out pretty tasty.
Side dishes of some Corn and Pico di Gallo.
Enough there for two meals for us, had the leftovers on
Sunday night with some Sweet Potato and a salad.
