Tonight I made one of our favourite pasta dishes. It was a recipe I got
from Epicurious years ago but no longer on their site so do it from memory.
The sauce is made with creme fraiche and chipotle paste. The original
called for double cream but thought that a bit too rich. When all tossed
together with grated cheese such as Jack and Monterey cheese, mozzarella,
cheddar and chopped coriander/cilantro it is such a yummy gooey comfort
meal.
Cooked in a new cast iron dish I bought today in Sainsbury’s as was on sale
so a bargain for £30.
Am eating really well and gaining weight but it is going on in all the
wrong places. 😱😩
