I’ve found the meat on a leg tends to dry out if you slow cook too long – even
at low temps (say 140C).
I cooked one well covered in foil for 8 hours once very low, and it came out
dry with a heap of liquid in the tray (from the meat)
Lamb shanks (with tendons) would do better as shoulder has lots of connectives
and more fat. Completely different to a leg (like pork).
I’ve been watching some middle eatern shows with boiled lambs heads – lots of
different meats.That WOULD be interesting…
