Heh, I've been too lazy to make croquettes for a while now.
But they turned out so good that I'm determined to get back
to doing them more often.
It's just a bit of a long and sometimes messy process...
cook the croquette filling
spread on a plate and refrigerate for 2 - 3 hours
make the croquettes proper flour/eggs/breadcrumbs
stick croquettes in freezer for 30 minutes or so
(prevents any fissures from breaking open when they hit the oil)
fry and eat the croquettes
