In the US I used to use trout a lot because our next door
neighbour was a mad trout fisherman and often gifted us
some when he had too many.
I've used the same base recipe for chicken croquettes,
ham and cheese croquettes. You can add in a bit of minced
herbs and/or piquillos for a bit of colour. Add Mexican
spices to kick it up a bit.
