Hi Steve,
Definitely save the breasts for a future use! Two between the three of you might not be enough unless bulked out like in a stir-fry, but as the breasts we buy tend to be around 300 g Dohn and I quite happily share one – a whole one each is way too much for either of us.

The recipe online doesn’t have a photo I got it from a cookbook I had back in the '80s, Australian Women’s Weekly Best Ever Slimmers Recipes ha ha. This became an entrenched family favourite. Anyway here is my snap from yesterday:

I did make a modification or two – used cream instead of evaporated milk for a start.

Or just pan-fry them with some kind of seasoning, slice, and chuck in a salad, maybe with some tropical fruit, and a tasty dressing.
And definitely make a stock with the carcass. You can freeze it if you don’t feel like doing it now. Ditto with the breast fillets!

Which leaved the breas tmeat left on carcass. Omicron has led to some chicken bits shortage. I could remove breasts to stirfry, use carcass for stock, or chicken soup but too hot, and i'm feeling lazy.
Any other ideas?
