Steve, not seen oysters for years. The first time I tasted one was at
Chesapeake Bay and thought I was going to barf. But back in Canberra got them
from a fishmonger and loved them. I have two oyster plates I bought in Sydney
at the Cross🤔😜. back in the good old days. The plates hold six oysters with an
indentation in the middle for sauce. I used to like them with a squeeze of
lemon. Remember how famous Sydney rock oysters were? The plates are back in
Spain never to be used again.😩😰

order. However, oysters in restaurants like this come from premium sources like
the south coast of my state NSW – basically south of where i live , or coffin

I NEVER eat plain cold shellfish out (excepting sashimi or sushi) – I would

Soo now my oyster sauce – a melange of this and that tweaked. Goes good with
most cold fresh shellfish.
2 tbsp oyster sauce
2 tsp rice vinegar
1tsp low salt soy
1 tsp sesame oil
Pepper and chilli to taste.
Put all in a dish and whisk (I use a micro whisk) until oil is emulsified.
Adjust to taste (maybe a little more rice vinegar)
