Not sure if this would work in your situation, but it has worked for  
me with some forms created in Word on a PC.
However, it does not take long to try it.

Use the "save as" command on the original document, without your added  
text (or with it, if it is easier so you do not have to re-enter), and  
name the document with a different name. For example, to keep it easy,  
change it from "Name" to "Name1".

What this can do, if it works for you, is "unlock" the document, so it  
is now "your" document, rather than "their" document. If the locking  
is causing the problem, the unlocking should allow the number fields  
to be editable.
