If you open a file in Word or Excel, then go to the File menu and choose "Properties", on the Statistics tab, it tells you when the file was last modified and it also tells you who saved the file last. Is that what you need? Unfortunately, I'm not sure there is a way to see who opened a file if they didn't modify and save it.
