Actions/Categorize/All Categories should give you a list of all categories and the color buttons ascribed to them. I think it will include the categories you ascribed previously. To add to more than one category you need to control/click the second and subsequent. To make the item colored go into Tools/Organise/Automatic Formatting/Add/Condition/More Choices and click the Category button. Then OK and set the font color.
