I use Eudora as my mail client, and it has a built-in spam filter (you have 
to pay for it now). Pegasus also has a built in spam filter. The suspect 
mail is put into a specially created folder in your mailboxes where you can 
give them the once-over and delete them.
Mailwasher (free) lists your email, and you can select and preview the 
mails you don't want to see before it downloads them to your mail server. 
It takes a while to do, and isn't much better than downloading them to your 
address box, IMHO, but many people swear by it.
I've heard good things about Popfile, but I haven't tried it myself.
Or you can create your own set of filters which will put your mail into a 
spam folder. For domestic use, the easiest one is to put everything that is 
not in your address book into the folder; put the addys you want into your 
address book. In some mail programs you have to work this backwards; you 
let everything in your address book through, run your usual filters, and 
then put anything left into the spam folder.
