Depends which app you’re in for reading and selecting. In word processors
like Pages and Text Edit, once you are interacting with the edit area you can
use arrow keys to move around and read by line, down arrow moves you down a
line. Option left or right arrow moves you a word at a time, note that the
word is read as the cursor passes over the word, so you end up at the
beginning or end of the word depending if you are going backwards or
forwards. This was a big thing for me to learn when transitioning to Mac from
Windows, as the default Windows behaviour was to move the insertion point to

To select hold the shift keys while you use your arrows. To select a
word,add the shift to your option left or right arrow. Remember that the
insertion point/cursor may be at the beginning or at the end of the word
depending which way you navigated to it.
To select to the beginning or end of a line from the cursor, use command
plus shift plus arrow, command left arrow would bring you to the beginning of
the line, adding shift selects to the beginning of the line. To select to the
beginning or end of the document, use command shift up or command shift down
arrows, that is just adding shift to the command to go to top or bottom of
document.
You had asked about selecting text in a pdf, in some cases this works, in
some you have to use the select all method as previously noted by others. I
have found no rhyme or reason as to why it somethimes works, I got as far as
finding out it has something to do with teh encoding, but gave up when I
realized you can’t tell in advance if you’ll be able to select individual
lines or paragraphs. Basically I try once, if it doesn’t work I select all
and copy/paste into a document. Preview doesn’t have an option to export to
plain text, but Adobe Acrobat Reader does. Sometimes a text export works
well, sometimes the format gets so messed up that it really isnt’ helpful. My
reading indicates that this is because of how pdf was originally developed
vor visual presentation of documents across platforms, never being intended
for accessibility of the actual text. It was all about how it looked and
printed no matter what system you were using. Pdf has gotten better over the
last 20 years, but it still has the ghosts of visual formatting built in.
