Olivia,  Mail tends to crash most every time I mess with my signatures also.

Near the very right end of the signatures options, there's a check box which 
says, "always place signature above quoted text".  By default, this is 
unchecked.  check it and close out of the signatures window.  YOu might want to 
press VO+end to pull yourself right to the very right most end and work left 
using VO+left from there.
