I have a similar question about my iPod Nano - how do I fast forward or
rewind?
Two ways. Either hold the forward and backward positions on the wheel for
about a second (works the same as iTunes, the longer you hold it the faster
it goes) or use the scrub bar. To do this, press the center button until the
name of the song is announced, then rotate the wheel. The faster you rotate,
the faster you will move in that direction.

Also, when in the "Podcasts" source and the "Songs" table listing them, how
do I eliminate a single episode without accidentally unsubscribing from the
Podcast?

Press the backspace key on that episode. This will remove it without
unsubscribing from the podcast, to unsubscribe from the podcast press
backspace on the podcast itself rather than an episode.

Finally, is there a way to delete Podcasts, songs, playlists, etc. directly
on the Nano without including the Macintosh itself?

Not sure exactly what you're asking here. If you mean a way to delete items
directly on the nano, without hooking it up to the computer, then I don't
believe so. The nano is basically a player, it doesn't really have a file
manager to speak of.
If you mean a way to remove songs from the nano without deleting them from
your Macintosh using iTunes, then it depends on how your synchronization
options are set. If you are set up to synch your entire library, or synch
all episodes of podcasts, etc then no. If, on the other hand you have
specific playlists synched with the iPod, then removing the song or episode
in question from that playlist will remove it from the iPod itself, but not
remove it from your computer.
