Hi Mike
This is where soundfly comes in. You run soundfly on each of the servers, and run soundfly receiver on your client machine. Once connected, soundfly will redirect any system audio from the running system over the network to the client. It uses the soundflower driver, which is the exact same component used by audio hijack pro to record system audio--no, audio hijack pro is not required as soundflower is free and comes bundled with soundfly. It will redirect anything, and you can pick the format soundfly will use (I recommend low bitrate of low-delay AAC, as that will reduce network audio delay significantly, and voiceover's speech output does not need high quality stereo sound). You then use a vnc client (something as simple as Apple's screen sharing will do in a pinch) to control the system, and you will here the audio output from it thanks to soundfly. Any remote control software will work with this arrangement, if you want to use something other than VNC/screen sharing. Better yet, soundfly is free also. You can get it here:

The major difference between a thing that might go wrong and a thing that cannot possibly go wrong is that when a thing that cannot possibly go wrong goes wrong it usually turns out to be impossible to get at or repair.
