[macvoiceover] Step by step on changing fonts in Pages

Ok, I poked my way through trying to change my font in a a Pages document.
Thought I had it, but then checking my document using VO T told me the font was
still the default font.
Can someone give a step by step on how to change the font for a document in
Pages?
My assumptions are:
Changes will effect selected text, i.e. select all, the font will change for
the whole document, select individual sections of paragraphs, the change will
effect only that selection.
