A Sampler is n instrument that can record and receive a sound of varying duration and assign it to a key or a range of keys. A digital piano for example uses sounds that have been sampled from a real acoustic piano, a good piano will sample each note, several times, a cheap piano will have one sample per octave, perhaps C which is then modified by raising and lowering its pitch to make up the octave. You can of course sample anything. All of the Instruments used in Logic and GB use sampled sounds originally. There are, I think, Samplers in Logic Rro and Garage Band, though I don't use them and you can also download a VST or AU Sampler to be used within an Application such as Logic or Cubase or Pro Tools.
