Nicole,

        I can't answer your second question, but as to your first, place two 
fingers on the screen, then rotate, like rotating a knob, until you hear your 
iPad say "Typing Mode".  Then, you should be able to flick up or down, with a 
single finger, till you hear it say "Touch Typing", then do the rotor thing 
again, to go to some other setting, so you don't, inadvertently, take it out of 
touch-typing mode, and there you go!
