It's in teh accounts section of the mail preferences. Select your account in the table, and iether use the tabs to edit your account, or the remove button is near the bottom of the window. If you have deleted all accounts, close mail, and when you open it again it will refresh itself and bring you the setup wizard like it is new. You can also use the add button in the accounts page of preferences to add a new account.

I am making a bit of a mess setting up my mail. I have set up an incorrect
account, but do not know how to edit an Account, or even delete it.  Can
someone point me in the right direction.
