can you give me instructions on how to get mine set up like yours so I can start using the tab key in apps like you do?

I use the tab key a lot. In fact, I use my mac in much the same way I used windows. I had to work at getting it set up that way, but if you want windows users to switch, giving them a springboard is an important part of that process. I agree that tab often does not provide information but it is then usually a simple matter to vo around a bit to find it. The problem with using VO keys quite frankly is that it feels cludgy and takes more strokes in many instances than using the tab and arrows does.
