if you have a notebook, press control and tap the trackpad button.  if you 
have a mouse, press control and tap the top of the mouse.

   Sara, the finder also has an 'open with' option.  Simply ctrl click
the file and you'll see it in the context menu.

   To assign a default program to a file, do a command-I on it and
you'll see a few options for doing this.  Sorry I can't go into more
detail at the moment.  Am on my way out.
