To remove an app from a folder you  open the folder then double tap and hold on 
the app you want to remove and slide your finger till the app is out of the 
folder and wherever you want it to go.

To rename a folder, Inter the folder with a double tap. Inside the folder you 
will find the apps you have put there and also the name of the folder is 
listed. If you double tap on the folder name an edit box comes up and you can 
rename  the folder. Remember though that you must be inside the folder and 
double tap on the folder name as it appears inside the folder if that makes 
sense.
