Can you bypass the guitar amp just to check that it is necessary ?

Here is my set-up.
A hand held microphone plugged into a guitar amp. I need some amplification
because it’s not a dynamic mic.
a 1/4” to RCA adapter in the headphones out of the amp.
RCA cables run to the inputs of a Behringer UCA-202 USB interface.
The interface is plugged into an Apple USB to Lightning camera adapter as per
specs, the adapter is plugged into the lightning port on my iPhone 8.
The USB interface has a monitor port for headphones, I can hear iPhone audio,
including Voiceover through the monitor channel just fine.
The interface doesn’t have any volume controls, and when I plug it into my
Mac it reports this to me. According to specs it should be a straight
line-in, taking its input control from the source plugged in through the RCA
jacks.
I have the amplified microphone volume up to the point it is uncomfortably
loud through the monitor headphones, but when I record something with Voice
memos or the video camera I’m getting rather low volume.
I tested my amp and interface set up just now with my Mac, recording to an
audio file in Quick Time I did indeed hear a volume increase as I turned the
gain up on the amp. It came across nice and loud.
Ok, just played around a little more, and increasing the gain with the same
set-up running to my iPhone did indeed yield an increase in volume, just
nowhere near as loud as on the Mac. Interestingly, the sound of fumbling with
the mic when I picked it up was just as loud on the iPhone recordings as it
was in the monitor headphones, that sound doesn’t experience a drop in
volume, it’s just the vocals. This sounds weird, I’m not finidng anything on
line about filtering or compression or limiting of vocals.

Plugged in, and the audio is screaming into my monitor headphones, but the
volume is still super quiet on my videos.
