That is very true. I set up a Mac Mini server a few months back and thought i could just connect a keyboard to do the setup and it really was a big problem without a monitor. Some applications seemed to be really "busy" for no reason, and it all worked just fine when I connected a screen. So, it's definitely a good idea to have a screen connected, even if it's just a cheap one!
