For production servers I would definately recommend Debian stable.  If
you absolutely need some cutting edge software on your server, adding
Debian Volatile and Debian Backports to your apt sources gives you
access to newer items without having to do a complex dance of tracking
stable and testing at the same time.

But then the past couple of days has shown how biased I am towards a
certain distro.  :)
