I don't think there is much of a qualitative difference, it just boils down
to preferences.

I prefer Postfix as it is a little easier to configure - at least I can get
it to do what I want it to (mostly).  I can't figure out Sendmail config
files at all.  However there is a Sendmail config script available at
http://members.nbci.com/xeer/software/index.html.  I haven't tried it, but
since you're running Sendmail you might try it out (and give us a review!).

One thing about Postfix is that root will not get mail - Postfix avoids
superuser priveleges, so can't write to root's mailbox.  You have to choose
another user to get root's mail.  This is actually more convenient for me,
since I don't have to log in to root to read e-mail from the cron daemon,
etc.
