Hi, James.  At this point, I'm not committed to any mail handling program.
If you have something that works, I'd be willing to take a look at it and
give it a try.

Sorry I missed this one.

Sendmail (or Postfix or what-have-you) will appear as an SMTP server to send
mail to that machine, pop3 or IMAP to retrieve mail from it.

Since I replace Sendmail with Postfix, I can't give you a quick and dirty on
how to configure stuff.  At home I have one machine configured as an e-mail
gateway.  The other machines (Windows included) send their outgoing e-mail
to this machine, and get their incoming mail from this machine.  The e-mail
gateway is the only machine that interacts with the outside world.
