I use X-Cdroast when I use a GUI.  It is very well behaved & stable.

However I also do a lot of burning with scripts (backups, etc.) so I use
mkisofs & cdrecord on the command line a lot.  There are a few other
reasons to get familiar with mkisofs, mkhybrid, and cdrecord command
line tools:
1) Most (all?) of the GUI tools depend on them.  They're just pretty
front ends.
2) If you ever want to burn bootable Mac CDs, or put together bootable
Sparc/Alpha/IBM PowerPC CDs, it is often easier on the command line to
build the iso.
3) At home I have a Yamaha F1 burner, and in order to use the 'disk
tatoo' labeling system I have to use a cdrecord version that isn't yet
fully supported by X-Cdroast.

The command line stuff isn't that hard to do as long as you're familiar
with the switches.  Printing out the man pages will get you everything
you need to know.  The man pages are very good and even have examples.
If you install X-Cdroast you'll be up and running in minutes.
